One issue I have with it is that I can't snapshot it like the rest of my system, but I don't really know if any other bootloader solves this issue

I don't think there is any boot setup that is better suited to being snapshoted than a "Unified Kernel Image".
With an UKI your whole boot setup is a self-contained and portable EFI executable.

How would you snapshot that? Afaik EFI doesn't support snapshottable filesystems
